    Aiming for a Medium with a 139 set temp I assume? Do you take them off before it hits the set temp and foil them or take them off right at set temp?

    We're doing a 4.5 lb rib roast today too, except in the oven.

    The oven part?

    I just got my current gas grill and I don't trust it to cook this pricey cut of meat with company over. Not yet at least.

    I have a few minutes left on my rib roast. I was going to do it on the Webber but I spent the afternoon working with my so on his bike and didn't feel like setting up the smoker when it got dark. So the oven it is. (And the xmas gift cast iron will get to use the residual oven heat to get seasoned).

    It was a huge hit! It was sooooo easy. We used to make beef Wellington for when my parents come to stay with us over either Christmas or new year's. Wellington is awesome, but a ton of work, prep, serving, and cooking.

    Sorry I didn't get a picture of the finished product. We were hungry. :)
