It's what was for dinner. This is a very cheap meal. It costs about $5.00 to make for the wife and I.
I usually use provolone, but last week when I made them, I didn't have any. I used mozzarella and it worked well, so I used it again this week. The provolone disintegrates quickly and the wife is always like, where's the cheese, but the mozzarella holds together better and there's not a huge difference in flavor.
My birthday is tomorrow, and because of your post when my wife asked what I wanted I said cheesesteaks!

Once a week works for me. I chop the meat up in advance and store it in the freezer along with peppers from the garden. The only prep work I need to do is cut up the onion. Venison cheesesteak also seems like it would be a winner.
Looks delicious, but I prefer white American on my cheesesteaks.... This ponders me the question, "how would this taste done in the smoker.....?" Mmmmmmmm
Did you know that provolone is just lightly smoked, aged mozzarella? Worked in a cheese factory in Schenectady, NY years ago.... Ate me some cheese there
