Mexican and tex-mex food.

    We love this kind of food and in the summer, I make something mexican or tex-mex at least 3 times a week. Besides being really good, it's also really cheap to make. Tonight, I made Nachos El Grande.
    Fresh tomatoes and cilantro from the garden and topped with lots of sriracha. We look like a couple pigs at the feeding trough when we're eating it. Anybody else eat the hell out of this stuff?

    We make something called haystacks. Corn chip base, re-fried beans hot, cheese, then all the salad makings on top then top with salad dressing or not. I like olives on mine, Campinspecter doesn't.

    edit I mixed the re-fried beans with salsa.

    :drool:Yes! Love Mexican Food. I have been to the southern border in Texas a few times and eaten some delicious authentic Mexican. Oh man. We found this place everyone was talking about for a buffet. It was like $8.99 all you can eat. :picard:Prolly not a good idea. :rofl: :lol:

    We cook Tacos here about once every other week. My wife makes some tasty Quesadillas on the BBQ grill. I need to make steak fajitas some time. Onions and peppers :drool:

    Have been eating at their various places for 35 years,it don't help that 1 of their locations is about 2 miles south- on the same street - of where I've been working at for 2 months now.So I grab 2-3 steak or chicken flour tacos some times twice weekly on the way home,especially on pay day......:yes: :drool:

    There's about a quarter pound of taco filling on there, that's a given.

    We have a mexican restaurant about 12 miles from us that has some amazing food. You can get your tacos made with a variety of meats, beef hearts and brains to name a few, I always get their al pastor tacos though. They have a green hot sauce that's made with tomatillos, it's hot as hell but I can't get enough of it when I'm there.
    They don't have a site, but they're on yelp.

    Occasionally I'll do an easy taco kit but I use black beans, refried beans, white canned corn, rice, of coarse the taco meat and some cheese, sour cream and some kind of hot taco sauce

    Love it here too. Fajitas, tacos, quesadillas, loaded nachos. Not crazy about hot peppers though. I don't use green peppers much either. I skip the refried beans for reasons I don't need to explain.

    These fajitas were from the wood fired oven a few months ago.

    That looks great!
    I made chicken fajitas tonight and they were the best yet. I think it was because I marinated them differently than usual.
