4 racks of baby backs headed onto the smoker over Hickory. Just finished up my southern creamy coleslaw and have 12 ears of corn that will be grilled also.

You didn't give me enough warning, pretty sure I'm a little more than 4-5 hours from your place.

Woops I just realized when going through my notifications I forgot to post the recipe....... :emb: Sorry about that

    1 head of cabbage
    1 carrot
    1/2 cup chopped onion
    3 tablespoons vegetable oil
    2 teaspoons tarragon vinegar
    1 1/4 cup mayonnaise
    1/2 cup sugar
** The tarragon vinegar is a key ingredient in the flavor of this recipe. You may substitute but it makes a significant difference **
Chop/dice all your ingredients until you have a consistency that you like. You can chop as coarsely or as finely as you like for this. Mix it all up and put it in an airtight container in the refrigerator overnight.

I prefer it to not be diced very fine and I also use more Taragon vinegar than it calls for (like 2-3times more). The amount you use really has to do with your taste preference and how big the head of cabbage is. If the head of cabbage is small I don't use all the dressing and if the cabbage is large I use it all and add quite a bit more vinegar.
