Wood fired skillet bake part 2

    This is a different version of my first skillet bake. The title should say "part 2". I fired the oven with white cedar fence post pieces and some elm. I only needed a quick, hot fire.

    White cedar is great to start the oven with, but it throws embers all over. That is why I don't add it when cooking pizza.

    I pre cooked pierogies inside and threw in some sliced hot dogs.

    In went a can of beans to the pan and the dogs and pierogies added. I mixed up some honey cornbread and added chedear cheese chunks to it. I put a few spoonfuls of the mix over everything. 20150525_115855.jpg

    35 minutes in the oven.

    Not homemade, nor are the beans. Pierogies are potato and cheese.

    Kielbasa would have been better, but I did not have any. That is what happens when I go food shopping without coffee first.

    Here I am getting ready to go to bed, trying not to think of the fresh buns out of the oven sitting on the counter and I read this thread. Honey cornbread and cheese? I will have to try that. I had a recipe that layered cornbread and sausages baked in a casserole. this sounds like it.

    PS - tonight we had potatoes baked in the boiler after Campinspecter fired today. mmmm good.

    I am finding cornbread mix to be very versatile as a topping for these type of meals. I think cheese, bacon, diced ham or kielbasa would go well in the mix. I have another idea to make. Maybe next weekend.
