Campinspecter had a really good idea for lunch today. Went to a restaurant and had fish and chips. There were no leftovers on my plate!!
Pesto Parmesan chicken breast Dredge the chicken in pesto, then bread with a 50/50 mix of bread crumb and Parmesan with a bunch of dried basil, bake toill the chicken is done, then top it off with some fresh basil leaves, tomato and more parm, and broil

I'm going to bone and roll a couple chickens this weekend and fire up the grill smoker. If it works out well. I'm going to wrap a bunch of them up and freeze them. Not sure yet what I want to stuff them with. This video is amazing.
By the time all the bones are cut out, I'd need at least 2 to feed 4 people. I like chicken. Pretty cool vid.
Came to visit some family, made them some dry rub chicken, so juicy. Here is what's left before I took one lol. Cook eats last lol.
