The way to prevent creosote is by not burning green wood, it must be seasoned/dry. Low and slow has advantages and drawbacks but as you begin to burn you'll know what you need and 1000* isnt worth imo. Did you read the link Backwoods Savage sent you on the other thread "3 year plan"?
Our woodstove probe thermometer (down to the cat) reads ~800⁰ in the middle of winter. Creosote gets created mostly by burning wood that's not dry enough. 1,000⁰ sounds excessive. Primer on Woodburning by Backwoods Savage
Danger picking nits ahead. You’ve been warned. Yes it’s true that a green wood fire will produce creosote but burning any wood creates creosote, or rather, the products of combustion that become creosote under the right conditions. The difference is that a greenwood fire never gets hot enough to raise the flue/chimney temperatures high enough that the condensation and products of combustion exit the chimney before they condense causing the dangerous creosote build up in the chimney. Having said all that 1000 degrees stove top is too hot for most stoves. What stove you running chain saw guy and where are you measuring your temps?
What are you burning in? It depends where and how you are measuring that...if it's the stovepipe, then an external surface mag thermometer will read about 1/2 of the actual internal temp...so 3-400* there is fine. If measuring the top of a basic steel stove then 800* should be considered about the high limit. A stone stove, or a cat stove, well it just depends what it is, and how you are measuring it. My wood furnace has a thermocouple in the top of the combustion chamber and 1000-1300* is the normal operating range for that.
