Whatever its called it is real good. First time I had it was on my honeymoon in 2000 at this little cafe. Memories of ex long gone but I still remember that pizza. I've made it at home many times since. Walmart has a frozen rising crust buffalo chix pizza that's pretty good too. For $5 a quick meal in a pinch.
Its MYOD (make your own dinner) tomorrow night as she wont be around. Mebbe ill give it a shot. Wonder if some Alfredo sauce would make it better?
I usually get a couple of cuts of meat just for me during the summer when the wife and kids are at summer camp mid July. I have a few dino beef ribs in the freezer I'll smoke up for myself. Kids go bonkers for the beef ribs, by far my favorite bite in BBQ. But they are crazy $ (what isn't expensive these days) and my teens can eat me out of a house. Even my little one can put away meat, she's a carnivore!
Im one of those weird people who prefer chicken over beef. Ill usually smoke turkey sausage with hickory if shes not around. She doesn't like strong smoke flavor like me. YES, meat is friggin expensive, especially beef.
B&B charcoal to start the heat/base. Oak and Hickory chunks mix, cut some of each Right now I'm bringing it down to Temp, just above 180º+- 200º. is where I like it, 225º Max! Gonna see where I'm at at 0830.
I'll check the temp at about 1630-4:30. It should be perfect. It's 8.1 lb. I put it on at 220º and temps will vary a bit for the next hour till I dial it in. My "go to" charcoal is B&B and it's not real cheap but burns long and nice for my use. I only buy it when I find it on sale, and it's few and far between. Walmart or Home depot will put it on sale occasionally and I'll get a dozen bags. I also cheat a pinch , In these Broncos, there is an ash pan under the coal bed tray, I put a handfull of Smoking pellets in the tray and they slowly burn/smoke off. Right now I have a chunk of Oak and a Chunk of Hickory in the coals, they've been heating up since light off. I love these Broncos and have 2 of them, Didn't get much smoking in last year, building the new shop and all but this years gonna be different! Well, it's on. 0830 and I won't look at it till 1630.
I had to do a Charcoal re-load at the 6+ hour mark... temps started to drop, I guess this (New) version of the B&B isn't as good as last years. I got this batch in February, it sure seems the last batch I had burn't 8+ hours fairly easy. I did notice "Duraflame" log company bought them out. I'm not real happy about it. I will have to crank up the heat now for a bit to around 325º. I want this to go 8+ hours.
8 Hours to the minute. What a beautiful thing... After Charcoal re-load, I brought the temps up to about 325º for the last 3 hours . Temps are right at 180º inside and it's so moist and tender. Now it sits for an hour. Pulled pork samichis by 6pm!
Costco has their own charcoal now. Its $13.89 / 30 pounds. We bought 4 bags. Haven't tried it yet but a buddy has and likes it. He does far more smoking / grilling than I do so I trust his opinion.
I have a bag of the Kirkland pellets. We don't have a Costco close, a friend that comes down from the city had gotten me some. Haven't tried the Charcoal yet, I have a summers worth of Charcoal.
