Easily. Tandoors are based on the same principle...clay and radiant heat. He pretty much has a horizontal tandoor.
In theory it could work, but practically, I think it would be a little difficult . Tandoor ovens are heated from below and the sides walls of the oven are heated. The heat escapes up through the top, and the oven can be constantly fired. Tandoor ovens seem to have pretty smooth walls. My oven, heated from the brick floor, sends flames up the walls, across the top of the dome and forward out through the door. The heating and cooling cycles have cracked the dome and the walls over the years. They also get soot build-up from firing. Not to mention my oven by design does not have a very big door and there is a good chance of getting a burn on your arm trying to get a piece of dough to stick up on the wall. I have though of trying cooking Naan bread in it, but it is not safe and practical. This oven can throw heat out the door felt from 4 feet away. Sticking my arm in there is not up there on my fun things to do list.
The oven floor, yes, that would work. The dome is hotter though. I could let coals sit and heat the brick floor. I see a new thread in the making here...
for the dough if you convert to weight and use a scale you will get better consistency batch to batch. at least that's what bakers say. I also use ricotta cheese in the calzones, give it a try adds a little moisture. looks good, will have to fire mine up this weekend.
@fishingpol I've just been browsing this forum and have to say I jump with delight every time a see a thread with WFO in the title. Seriously man, everything you make looks like it came out of a kitchen in a 5 star restaurant. I would love to make one of these ovens one day and learn how to make things in it. Do you have any pictures from back when you were building yours or was it already there when you moved in? You've put me off on a tangent today googling all about WFO's haha.
This will be gooder. I hope Jon puts up his build pics. I have a hard time looking at his food pics w/o putting on a bib.
I do have the build pics. I've had a few requests from folks here, so I have to dig out some notes on the build. Stay tuned in the DIY. @Razo, if you have not seen these Jas. Townsend videos on Youtube yet, plan on losing a few more hours drooling.
Whenever I see WFO I think running the throttle wide f'in open and walk around making engine sounds. Those zones looked great.
