Washington around lake Winni. the golden road. are major points of interest that come to mind.

What is a hoagie? Edit: I looked it up, we call it a grinder around here. If you do go to Boston, and want the real deal Italian grinder, Look up New Deal fruit co. Get the top shelf Italian just the way they make it(no lettuce and NO Mayo) .
Oh and, winter in New England can be both magical and downright dangerous for travel…. Not saying to avoid it but be aware that if a storm rolls in you might loose a day or 2.
If you're in the northern area, I'd recommend driving NH112, the Kacamagus highway. It's a twisty road between Lincoln and Conway. Usually lots of traffic when leaves change colors. No charge to drive it. Several pulloffs for waterfall viewing. A nice ride most and season.
New Haven is the place for pizza! Sally’s, Pepe’s, Modern. They can be busy on the weekends and some weekdays too. A good option is to order ahead for take ut and eat it in the car/parking lot. Zuppardi’s in West Haven is very solid New Haven pizza and often has less of a wait. For any of those places, go light on the toppings; I recommend two max. That style of pizza shines the less you have on it. I echo the suggestions in Rhode Island, the Narragansett area is great. If you like Oysters, try 210 Oyster Bar. A neat local spot is Captain Jack’s in the area.
A grinder is a poor excuse for a hoagie! But yes, it’s a regional name. Every relative I have who lives in New England eats almost nothing but pizza, cheesesteaks, and hoagies when visiting, even for breakfast. One thing they all say is they can’t get rolls like this at home and many others agree.

I’m sorry but there’s no place in Vermont that can compete with any corner sandwich spot in the south Jersey/Philly area. My sister has lived in Vermont for 40 years now and she has hoagies for breakfast when here.
We will just agree to disagree waifs deli in Winooski VT could he (owner) was Greek or Sicilian and came from Jersey side of NYC; when I worked in Manhattan he gave me list of places I could afford to eat. Most of his places were relatives.. IME the best food regardless of city is usually in the immigrant / low income areas

I think I would like to see Boston (Bunker Hill and some other stuff). I'm not sure I want to be in Boston to do so? I've heard pizza & french fries are a thing in Old Town.
Last folks I knew of that went there said it looked like a foreign country. Heard that about Gatlinburg too.
