Memphis style dry rub. A style I am starting to appreciate. The notch in the top center is where the rack nearly fell apart from handling. No wrap. No 321, no injections, just smoke and time.
Also, bros that B&B charcoal is about to bankrupt me. I love it but it's so freaking expensive!!!!!!!!!
9# pork butt got up the morning egg was still at 225 finishing up 7 hours smoking internal temp was at 180, covered with foil and brought it up to 198. Going in the crockpot with some sauce until lunchtime.
If you have a blains farm and fleet around you its on sale. Buy one 17.6 pound bag fir $12.99, get the second one 1/2 off. Oak brickets.
I used B&B for a long time, usually like $20 a bag around here. Now that Jealous Devil lump coal is at that same price point at Home Depot, I've been buying that. Took me forever to try it out because I swear it used to be like $35/bag and I refused to buy it. But I gotta say it is better quality than B&B and I think it's my new favorite. Barely any waste at the bottom of each bag so far. Yes there is some crummy waste at the bottom, but no where near the amount of all the other lump brands i've tried including the better brands like B&B or FOGO.
Made a jar of pickled onions cause I'm shot. No really cause I'm gonna make pressed subs, and I like them in the sammich
