Those look pretty meaty compared to the other beef ribs I've seen from Costco. I've always been curious about them because they are usually priced pretty dang nice.

And speaking of beef ribs here's the largest slab I think I've ever done. It was about the same size of the last 10lb brisket I did if not bigger. I didn't weigh them though and it wasn't on the pack. 9.5 hrs on the Weber smoker with shagbark and lump coal. These put us all into a meat coma. 2 ribs was enough for 4 adults.

    Looks great!

They are on my list of things to try and smoke, but they are pretty hard to find around here.

Thanks, and yeah not easy to get around here either. I spent way too much with my local farmer on 4 slabs of these last week, however it's local and grass fed beef which for stuff like this I really do like. Steaks not so much, but the slow cook items, ground beef, and some other stuff I do like grass fed. Her prices though are still cheaper than some grocery store prices around here. Costco gets beef ribs but they aren't plate/dino ribs like these.

How many people do you usually cook for, on average?
