Nothing cooked here but burgers and dogs today. N Y strips the other day. Only news I have is that I have been saving pieces of unburned hardwood from the furnace. With the cold nights and mild days, just one fire is all that is needed for some time now. The temps get up into the 40's and 50's before the furnace is done with the 3-4 pieces I put in it......so they just kind of slowly burn out. Leaving some nice pieces of lump charcoal. I can't believe how fast this stuff gets ready to cook on once I light it with a bit of charcoal lighter fluid! I'll be grabbing as much as I can from now on.
10.5 lb brisket from Sunday. 17 hr smoke on the Weber. FOGO lump coal + shagbark hickory. Wrapped at 175ish degrees (when bark was present) and left on for 6ish hours. Unwrapped and put back on for another hour and a half or so until internal came up just shy of 200....Yes I was sick of waiting. Rested for about 3 hrs wrapped in towels, in a cooler, still was hot when slicing. Best brisket I've ever done...not that thats saying much, because I've not done many, but this quite honestly was great. oh, and salt/pepper only for a rub.
