Pouring rain here @ the compound®, but we need to press on,so it's asiago peppercorn pork filet with low sodium bacon and sweet peeper rub

 

Gonna shoot for 145-148° internal.
The Texas chile will have to wait til tomorrow I need to prep some more ingredients tonite.

 

Years ago I was looking at this place about ordering. I never did, but bookmarked it. I don't know how their prices are, compared to what you want or grillgrates.
