Manicotti shells that I stuffed with 1 pound pork sausage 1 pound ground beef 1 can diced green chilies 1 cup sour cream 1 bag farmer cut cheddar shredded cheese All mixed together I soaked the shells for about 20 minutes in warm water you don’t want to cook them. Stuff the shells wrap them in bacon and then I seasoned them all with Kenny’s honey BBQ seasoning and put them in the fridge over night. The bacon will soften the shell the rest of the way. I smoked them for 1 hour at 260F and then basted them with Stubbs BBQ sauce and smoked another 15 minutes at 225 till they got nice and tacky. Your done at that point.
Aggravation level, very high. Somewhat local guy listed a 395 for sale @ $300. Too good a deal to pass up, it just needed a few small parts. Messaged back and forth, made arrangements to drive 1:10 one way to get it. I pull in the meet spot and see message that he found the parts and tried to start it, then it lost compression... told me to turn around, saw is blown up. I just lost about 2.5 hours and 1/4 tank of gas.

I've had pretty much good luck both buying and selling off CL. The 2 irritatig experiences that I recall: Guy was selling a real wood nightstand. I was fine with the price and had him set the time (to be picked up that day). Place was 40+ miles from me so about an our. I got aobut 10 miles away and jhe texted me that he had to go help his daughter and would let me know when he was back in the area. Apparently he never made it back home. Sold my circa 1995 Wheelhorse garden tractor. It had not been run for a couple of years (no need in the yard I have now), but had run well previous. I priced it appropriately and said it was firm. Of course the battery was run down, plus I didn't want to risk starting it with old gas. Guy called and asked lots of questions - I was very transparent (and I had posted pics of any damage, which was basically 1 headlight). Then told me I better be there when he got here because he was traveling an hour to pick it up . When he got here, he wanted to pay 1/2 what I was asking because I couldn't start it (which I had told him and it was stressed in the ad). Um, no, that was not the deal. "So you just wasted a bunch of my time," he exclaimed angrily. Well Dude, if you had made an offer like that over the phone I would have told you that wasn't happening. I had a list of people who were interested, called the next guy and he was more than happy to pay my asking price and drive off with it. But, usually my experiences have been positive.
Caffeine in. Bringing the youngest to school this morning and then coming back home to cut some firewood. Starting on an area I’m going to clear for another horse pasture. So a decent number of small Ash trees to take down. I will leave some of the nicest trees for shade. Some Pine, some Ash, a couple Cherry. This will take a while, and then the stumps will be pulled next year sometime, hopefully late spring. Then grass planted.
Was going to stack a couple cords today, gate opener what appears to be stripped out. Ripped everything apart and going to see if I can get parts or if it is better to just replace. Its been in five years so it opens and closes at least 4 times a day almost every day, 365 x 4 x 5 = 7300. That's a lot of cycles for a consumer gate opener to go through.
No I like the fat to be left in but I did use 90/10 beef. The fat helps the shell soften the rest of the way in the smoker. I will say that the bacon would probably do that by itself though.
