    Smoking Thanksgiving Turkey day is tomorrow. Normally I do my smoking on Black Friday, but Dad wanted a smoked turkey so it’s tomorrow. So I can take it down on Thursday. Doing 3 tomorrow. 1 on the GMG and the other two on the Traeger. The one on the GMG I’m going to do a rotisserie… worked out great last year…

    Doing a buttermilk brine over night. Then I’ll be doing a Apple theme… Apples on the inside and spritzing with Apple juice…during the course of the cook.

    Today: 1/2 gallon buttermilk, 1 cup kosher salt, 1 cup brown sugar, 1/4 cup of Good Eats Rub then filled up the rest of the bucket with water to submerge the birds.

    Looks and sounds good. How big of a bird? I’ve been liking the 12-13 lbs range in recent years…. They seem to cook more evenly….
