Just got done with a batch of lazy man's summer sausage. Had to cheat today and used the oven because I wasn't going to battle the 50 mph wind with my smoker. My wife didn't even mind the house smelling like meat as it cooked. It's some good shtuff!
Oh man! I could put one of them on a hoagie roll with mustard and sauted onions! Ugh, it's 2am and now I'm hungry!
Here the recipe is. It is Mama Bear's grandma's recipe. Pay attention to the part that it is using kitchen spoons for measuring because once we out of curiosity used actual measuring spoons and ended up with a lot more ingredients and it probably would have ended up being extremely salty. I am a summer sausage snob and usually only like Cloverdale brand so the first time I made this I was very pleasantly surprised by how much I liked it.
I have made similar sausage to this in the past and it turned out great. Made excellent sandwiches! Goes well with extra sharp cheddar and a Ritz cracker, but then, what doesn't!(and a dark beer)
I just made a couple more batches. One I put high temperature cheddar cheese in, very excellent. Number 2 is Garlic Lovers and I added an 8 Oz jar of minced garlic to it and it is amazing.
