Have a chance at buying a few NIB Stihl chains on the cheap, but they are square ground. I only round file. Any issues if i do this? Sharpen them as i normally would free hand?

Yes. It takes a little extra effort to initially get the square off.

Zero issues, file them as you normally would.

Do i have to completely file off the SG on my first sharpening for optimal cutting or can i just take the dull edge off? 28" & 36" chains for $25 each and he has several.

Yes that has been my experience with it. The square ditch will remain for several sharpenings, unless you power it out.
