    I've been using mostly ash and red maple to get it going, then load it up with oak. I keep the splits generally 2" x 2", seems to work nicely when done that way.

    This thing is insulated so well, it gets up to 1000° in around 1.5 to 2hrs. And holds that temp for a long time, even without the door being done.

    Had a great night last evening hosting some good friends over. Made 5 pizzas using our homemade sauce and a dozen kebabs also on the keyhole pit, nobody left hungry I'll tell ya that!! Next year, we will definitely have an evening of the GTG here in the backyard at the Overkill Oven, so make plans to be here in June 2023!!

    I restored an 18th century shovel that someone installed on a rams horn peel handle many moons ago to distribute/move the coals around, then use a pizza oven brush to clean the cooking surface. I'll do a video on the whole process once we get the oven completed

    Looking good. We did a similar project a couple years ago, and it was well worth it. No pizza oven, though most people install them. Wife doesn’t do dairy, and the last thing I need is another pizza.
