What's on the grill or smoker?

So today's cook is a 5lb strip roast choice,not prime...I'm gonna leave the fat cap on and score it...also will be making my own wet rub mixture. Going in the big joe about 230° till it hits 110-115° then goin in joe jr. @500° for the reverse sear til I like it

 

Your grills have nicer wheels than my car.

Here's my wet rub...coarse pepper,raw sugar,garlic powder,onion powder,paprika,salt,apple cider vinegar cilantro
