picanha steaks that i seasoned mainly with coarse pepper...no salt just whatever is in the sweet preacher.the pepper took it to a new level...will be doing this again
its a roast that i trimmed and cut into steaks....as tender as tenderloin with the beefy flavor of ribeye.....would be a top sirloin cap at your butcher but some places trim them too aggressively
