    Got 2 hogs coming in the next couple weeks....just in time as we are about out of everything....just some oddball stuff left. Brined pork shanks cooking on the gas grill, powered by a SS bowl full of maple charcoal out of the OWB.

    Last night was sous vide sirlion finished on the smoker @450° for a nice sear. Along with brussel sprouts, carrots and onions in cast iron with garlic and butter. Oh and of course jersey corn.

    That's from a small butcher shop in Erie PA brought to me by a friend. The patties are breakfast sausage and the 2 links are Italian sausage.
    Tomorrow morning I'll microwave the a patty, not sure what to do with the Italian, never really cared for it. Maybe with enough tomato sauce, pasta and parmesan cheese....
