I usually just "wing it" with jerky. Whatever sounds good at the time. My go-to is 1 part soy sauce, 1/4 part brown sugar, 1/4 part wooostahsheer sauce as a base. Then add whatever level of garlic powder, onion powder, black pepper, and red pepper flake you are in the mood for. Sometimes I put curry powder in too....its really good that way.
