chicken in BACON!

    This is a chicken breast, butterflied, with sharp cheddar and broccoli inside, wrapped in BACON! and smoked......

    Nice.

    I did some last summer on the keyhole. Anything wrapped in bacon and cooked over wood is a winner.

    That could be anything wrapped in bacon, I made a potato look like that once. I insist that you must deliver so that I can verify that is actually chicken.

    I smoked it over pecan for 60 mins, about 180 degrees. The bacon pretty much covered the chicken, so, not much smoke flavor into the chicken, but the bacon was extra smoky. After the 1 hour smoke, I pushed the temp up to 290, it took about an hour to cook at that temp (meat at 165 degrees- that's what those probes are telling me).....the chicken was quite moist!

    Had a couple leakers, where the cheese found a way out, but still good.......

    doing a pork butt for pulled pork this weekend......don't get a lot of weekends off, but I do this one. That'll take a bit to cook off, but you simply cannot have enough pulled pork! It even freezes well! Like a perfect food........

    Normally the only way I will eat broccoli is chopped up fine in this certain salad mix that also has kale,brussel sprouts,chicory,cabbage,pumpkin seeds & dried cranberries.... Its like a really crunchy cole slaw.

    But I must say that looks great.:thumbs: You put enough cheese,bacon & peppers/onions with something & I'll usually try it once,maybe even cauliflower which I don't like either. :rofl: :lol:
