Have a great day everyone! Definitely doesn’t feel like Thanksgiving given what we’ve all been through this year but there’s hope on the horizon.

Forgot to announce the first cooking in my pellet stove occurrence for the year. Early Wednesday morning I washed up a couple of sweet potatoes, wrapped them in foil, and placed them on the side "shelves" of the P43 (I had it running in a low feed-rate constant mode). By the time the house was getting too warm the taters were done so i pulled them out and turned the stove back to thermostat control. I love all the syrupy goodness that comes out (finger licking good right there) and the skins split/slip right off. Dumped the good part into a container then mixed in lots of butter and cinnamon. Once cooled off the mixture got refrigerated.

Had some mixed with yogurt, real maple syrup, homemade vanilla and some cream the last two nights
