Newbie here, any concerns with rot in stacking split wood on pallets, top covered, in a field where the stacks will likely be entirely covered in snow all winter?

I wouldnt worry. Off the ground and top covered you're okay. Warm weather promotes rot and insect activity. Dormant in the cold.

You give the right answer yourself! Stacked off the ground and top covered. The only thing to add is to also get it split before stacking.

I stack all my wood like that and have for years. The only difference is that I do not like pallets. I simply cut 2 saplings, lay those down and stack on top.

Stacking over snow/ice can mean stacks tipping over in spring. I learned when i stacked single rows on ice and snow

As long as it's top covered, no issues.
