At my hunting camp and making a new indoor wood rack, so using up firewood in the old rack. Down near bottom, found stuff that I know has been in there 20 years as some of it is pieces of oak planks from a bridge I scrounged when they replaced the deck. Dead oak, stored in perfect conditions for 20 years and when I used some for the evening campfire, it was pushing moisture out the ends! I was pretty impressed....it did burn well though. My red oak- standing dead, CSS’ed and top covered 7 years does that too. Burns great also.

Yeah, oak just does that. 99% will burn nicely then suddenly you'll get a couple that will spit at you. It happened at one of our get-togethers. The guys really razzed me about it but I still wonder if they didn't just pour some beer on it then take some pictures.

The Gamble Oak and Arizona White Oak we have here will do the same thing after years of being cut, split and stacked. Yes, this is normal.

White oak , due to cell structure, are very reluctant to give up moisture content.
