Eggs; superfood or boring?

    I like 'em about any way except raw.
    If I want something simple and quick I'll fry and egg and throw it on some toast with mayo...maybe fry some ham, add that and a piece of cheese... :drool:

    I fry up 2-3 half slices of bacon in a cast iron skillet, 2 eggs in the grease over medium with healthy amount of pepper and a light dash of salt on the yolks, butter the bread then pan fry/Texas toast it in the left over bacon grease. Then top it with the bacon eggs and if I have any some avacado maybe a sprinkling of garlic salt! PS home made sourdough bread is fantastic like this!

    Kids love egg in a nest same idea except you cut a hole in the bread then fry an egg inside the hole over easy or medium with bacon as a side.

    Take a banana, slice / dice it and microwave for 30 seconds (in a bowl). Mash up the slightly heated banana, then add an egg and scramble it all together. Microwave for 1 minute. Scramble again and nuke for another 15 seconds. Add cinnamon and butter on top. Pretty much like banana bre3ad. You can also top it with real maple syrup.

    FYI - heating the banana is for green to just ripe. If you have an over-ripe fruit, you can probably leave out the nuking part. If you do nuke an over-ripe banana, drain off the excess moisture before adding the egg.

    Funny thing, for one whole summer, 2-4 eggs cracked into a glass and drank them down before going out the door of the trailer I was living in. Then, 6-7 years later, my wife, sisters and mom would make Christmas cookies during Thanksgiving. I love the taste of raw chocolate chip cookie dough (more so than the cookies themselves). So, going in and out through the kitchen would grab a spoon or finger full. Well, you guessed it. Spent the next two days on the floor of our bathroom curled around the porcelain throne. I thought I was going to die. Food poisoning. Never ate raw cookie dough since nor a raw egg. Don't know if I built up a tolerance or just was lucky that whole summer with the raw eggs. No, I do not condone consuming raw eggs.

    I believe i had that once. Salmonella, maybe.
    I had been working with raw chicken making wings in the oven for supper.
    About 3 am started feeling sick. Stomach pain so bad i was doubled over laying on the bathroom floor. Liquid Projectiles from both directions. I wanted to die it hurt so bad. Lasted a few hours. Ugh!

    How about the free lunch? Buy a nickel beer and get a pickled egg.
    The free lunch.

    We pickle ours in jalapeno juice. Gives them a little snap.
    Good for a quick, on the run snack. Makes a killer egg salad sandwich in a flash. ...or,
    my favorite after a bike ride....half a sweet pepper, two pieces of olive oil/cheese
    toast, pickled egg and a honey crisp for desert.
    We cook them in the IP.
    Makes them too easy to peel. Just did a new jar yesterday.
