Bought a used Simington grinder a while back and at the beginning end of the learning curve for trying to learn how to square grind saw chain.
Having decent eyesight, (which I don’t have) would be a big help.
I’ve done a little 3/8 and yesterday tried doing some .325. The .325 actually cut decently.

Looks great. I would love to have a simington grinder. I'm sure if you keep practicing, you will have it down to a science.

I have a Simington just like yours that I have used now for about 7 or 8 years. I do not like to file but I do like square ground chain. I even use it for my milling.
I have a set of magnifiers that kind that you see jewelers using. That is what I use when making square ground chain. I am coming up on 70 now so the eye sight it not what it used to be either.

Your first picture shows that you got a little bit of a beak because you were a little low. If I did not have those magnifiers I would be doing the same thing.
The other thing is I do not use the stops for the swing arm because I can see where the corner of the cutting tooth is with magnifiers on when grinding.

I like using the blue wheel. Also keeping the wheel clean will help stop getting the cutters to hot.

Next time I get up to Madsens I will try to get a blue wheel. Using the salmon wheel now concerting some round ground chains. I’ve been trying to get rid of the beak. Getting better than when I started. First ones looked like a kiwi beak.
