Yep, you'll definitely have to give it another shot. The ziploc bag and freezer time makes all the difference when it comes to making the sausage rollup easier. Another thing I've learned is to not go too overboard with the innards. Trying to get too much stuffed in there just resulted in a big mess when it came time to roll it up. edit: Oh, and it probably goes without saying, but after you pull the sausage square out of the freezer, just take a pair of scissors and cut the bag off.
Ok, I'm running behind schedule today. Had to go up the road and give my neighbor a hand getting his excavator running after it sat for the last 8 months or so. We had to pull all the fuel lines and blow out the injectors and then monkey around with the fuel filter and then...well, you know how that goes. Anyway, gonna head to town here in a bit for a supply run. I think I'm gonna go with a salad type thing for my innards. Spinach, onions, tomatoes, green olives and jalapenos (which will get me as close to being a vegetarian as I'm ever liable to be). I'll probably get it on the smoker tomorrow at some point, unless something else comes up.

Ain't that the truth. When I first heard of these things, I went crazy and it seemed like I was making one every week or so. I've backed off and probably only do a couple a year now for my own consumption, but I usually try to make up a few and give them to my favorite neighbors every now and then.
Yeah, I really like those Sierra Nevada Pale Ales. I usually just throw back a few PBRs, but I figure that when I'm smoking up a fatty I may as well go all the way with the decadence.
