I have a Honda commercial lawn mower and would like to take the blade off to sharpen it. Which is the correct side to lay it on to take the blade off - the dip stick side or the carburetor side ?

Air filter up is what I generally go by. So That should be the same as the carburetor side. So lay it on the dipstick side.
