Not unless I decided to bring these :D

No guarantees that I could attend at the moment anyway, even one 2 hours away. What with gas, hotel etc..Work has been spotty this spring, cost me a pretty penny to get the SP125 electrical problem fixed + the other usual expenses. But we'll see what happens in the next few months......

You won't need a hotel. Just bring a tent and a sleeping bag. I am taking care of food and beverage. Just get there and you're set.

Yep, they are delicious and well suited for events like this. Maybe it's an Iowa thing.

Okay, I had to google walking tacos to find out what they were. what a neat idea for an outdoor gathering or even indoors. Next family gathering I will have to introduce the family to them. Doesn't take long for a regional food to go global.

The ones we get around here ALWAYS use Doritos instead of Fritos. IMO that's the difference between walking tacos and Frito pie, and I much prefer the less salty taste of the Doritos. I did a quick google search and at least one link called it an Iowa tradition, so maybe it is more regional thank I thought. They popped up around here in the year 2000 (in the year two thous-and).

I make what we call haystacks and it is good for a big gathering. Base of corn chips on a plate, warmed up refried beans mixed with salsa heaped on top, cheese and then salad toppings such as lettuce, tomatoes, red peppers, cucumbers, olives, etc topped with salad dressing.

So I was thinking... you said HOG? Why not a Filipino box spring hog?

Today's recipe comes from Tom Waits.

Dig a big pit in a dirt alley road
fill it with madron and bay.
Stinks like hell and the neighbors complain
don't give a hoot what they say.
    You gotta smack that hog,
    roll him over twice,
gotta baste it with a sweeping broom.
You gotta swat them flies and chain up the dog

Having a year, or even 6 months is enough time to get people to schedule vacation, etc.

I look forward to making a few next year and hopefully one more before the end of this year
