    Where do you actually buy pork bellies? There are a few good grocery stores in the area but have never seen them being sold.

    There a wholesale butcher shop about 45 mins from me...i check prices for pork bellies n if there in my expectations...i order roughly 75#s of fresh,trimmed n skinned ones. I vacuum pac them n once im down to a few..i order again.
    Costco,sams club will have them depending on locations.
    I find that a lot of local butcher shops want 4 to 6 bucks a lb. NO WAY!
    the last 2 orders i got were under 3.00 a # n tbere really nice...

    I did my first smoked pork belly burnt ends on Saturday. Outside temps were around -21c/-6f but I was able to get up to around 225f with a bit of work. Turned out good. I think I would make the pieces bigger next time but over all I was impressed. I can see myself making this for get togethers as an appetizer. My Bradley smoker is about 13 years old but aside from a few minor issues its still doing its thing.

    Sean those look great and sound interesting. I’ve done brisket burnt ends but never made them with belly. Definitely will try that.

    Dinner last night was jambalaya. Rabbit, smoked andouille sausage and gulf shrimp. Came out awesome. Follow a recipe from a cookbook I got in New Orleans. I can post it here if anyone is interested.
