Im a big Hank Jr fan and hes done plenty off covers over the years but this is my favorite. I remember blowing a fuse on my car radio blasting this one day.
Green Day did an awesome cover of Chesp Trick's "Surrender" and The Replacements "Bastards of Young". All three bands are personal favorites of mine.
311's version of The Cure's "Love Song" - one of the few I say is better than the original. 311 was awesome live
Burning House of Love covered by Great White: Great White was an awesome band, had some trouble in Rhode Island which they haven't recovered from, but otherwise stellar. Check out their Led Zepplin covers as well.

Slash does The Godfather. Fantastic 4 minute intro and the next 6 minutes gets even better ! His work around the 6 and a half minute mark to the end is amazing
Neil Young-Beatles A Day in the Life. I was at this show in Mansfield, MA-Farm Aid 2008. When he finished there was silence for a few seconds and the place erupted. This closed his set and he was being followed by Willie Nelson. A guy behind us was pizzed off saying" why the hell did he do that? Willie cant follow that, it wasnt right! He should have done Cinnamon Girl or something less intense" .......... Really? Gotta watch to the end as Neil puts Ol'e Black to the test
