    It’s one of those tall round black thingies with two racks inside and you put the charcoal and wood in the bottom. I’ve been watching YouTube videos, so starting to get some ideas on how to operate it... ~Lissa

    It’s not easy to do a long cook and still get a juicy brisket. I should know, I’ve ruined a few. When they come out nice, it’s like a work of art. Same way with a good pastrami.

    Lots of tri-tip in Washington. We love it so much that we don’t even buy beef steaks anymore. It’s super cheap too, same price as burger if you don’t mind trimming the fat.
