    Chicken thighs cubed up and seasoned wrapped with 1/3 slice low sodium bacon and doused with memphis rub,smokin with apple today.

    I knew you were going to say something as soon as I saw those tri tips. :hair:

    I wish the Costco near us would carry them. I can’t even find a whole pork belly. They have them cut up like bacon 1/2” thick.

    .89 cents per pound :Dbutt.
    My first (non summer temps) smoke. Upper 40's & mostly cloudy, turned out fine just a little longer smoking time. I'm back to double foiling to save that nectar. I un wrapped at about 7-8 hours, another hour naked on the rack, pulled it then back into the smoke for as long as I could stand it. DSC00124.JPG DSC00127.JPG

    Mixed in a little of the drippings at the end, that's new to me and I liked it. Prolly the last smoke of the year.

    These last weeks steak's might be the last of the year, hope not.

    Man, I just found another great use for pulled pork. I have a hard time saying good by to my "pp" and freezing it, so this AM (staring in the fridg) I had some left over sausage gravy on top of the container of "pp", hmmm. I minced up a bit of the pp and put it with some sausage gravy, gave it a stir and threw it in the micro wave then threw it on a toasted english muffin, Boy I was proud of myself this morning.:D
