I’m slackin’! We had out of state company yesterday so I did make a 5 pound top round. 9EE90A42-C121-4809-8D4B-D10D85664603.jpeg A bit of maple and apple smoke then to the slicer! Served it on weck rolls with horseradish and Aujus. Also whipped up some Parmesan tater wedges in the Dutch oven. I’m thinking some sausage, apples and onions are in order at some point this week! My brother caught this upload_2018-9-17_15-56-11.jpeg yesterday morning and it’s destined for the smoke box, I’ll have to confiscate some pictures!

Little bit of outdoor cooking tonight. Apples, onions and fresh dug taters from the garden.

I forgot last time I made it I cut the sausage into pieces rather than crumbling, but still tastes the same.

A busy day today. Did another Tri-tip, this time on the Weber Kettle. Tried my hand at smokin' some cheese cause it was in the 60s. This is the first time so it’s more or less an experiment. Did Gouda, provolone, and a couple Mozzerellas that I dint take a pic of. Vacuum sealed the cheeses to let it rest in the fridge for two to four weeks.
