American Cheese Recipe

I want to try this next time I have some colby.

1½ teaspoons unflavored gelatin
1 tablespoon water
12 ounces Colby cheese, shredded fine (about 3 cups)
1 tablespoon whole dry milk powder
1 teaspoon salt
⅛ teaspoon cream of tartar
½ cup + 2 tablespoons whole milk

I'd rather just eat the Colby.
My favorite cheese.
However, that looks interesting and I may try it sometime.

So if I make this in Canada, is it Canadian cheese? when I was a kid, Mom would buy Velveeta cheese for grilled cheese sandwiches.
