    OhioStihl check out the grilleye thermometer. You can alarms for any meat/temp. It has a loud audible alarm on your phone when temps are reached

    Yes, great bark. Since I started with a stick burner I can’t go back to anything else. I have a pellet smoker but it doesn’t get used much anymore

    I keep trying to like my Traeger pellet smoker... but I've had too many (IMO) extreme plus temperatures to fully trust it to just walk away from it... like this morning it caught it at 315 F when it was set to 225... I've got it tarp around for the wind and covers over it to help insulate it...

    To be fair, you can’t really “walk away” from a stick burner either. They require more work and attention which is why it is good to have other options around as well.

    Have you considered a remote monitoring solution to warn you when the Traeger or any cooker gets too far outside the target range? I have a HeaterMeter to control my kamado, but I can use simply to monitor the stick burner and send my phone alerts at either high or low alarm points. You could also get a Maverick or Thermosorks Smoke as a simpler and cheaper remote monitor as long as you don’t go too far.

    I've got a set of Bluetooth ones already... but from my side, I was expecting a little more consistent and controllable temperature. This was bought so I could just periodically check on it and let it do its thing... especially for these long cooks. but I'm learning a little more each time. Like my smoke setting that they say to use at the first "x" amount time. This controller seems to put the smoke, but your liable to reach uncontrollable temps. Cause basically it's not temperature controlled situations rather a timer controlled one... where it turn on for "x" time and off for an "x" time. So I put it on the 180 F temperature for that time instead of the smoke setting. Merrily a major learning curve.

    It’s a Masterbuilt 30” with Bluetooth. Worked really well. Everybody liked the food.

    A little cheating.
    Picked up 3.8 lb corned beef flat and did the strami rub.
    Ok in a pinch.
    Still better than store bought I have had.

    Funny, but I picked up a corned beef yesterday with the same intentions. Yours looks perfect. How did it taste?
