    No, we don't even have a county fair. We have a state fair, but I never bother with that; although sometimes I fantasize...:)

    Today is the day. Smokehouse fired up and cooking some sweet peppers, poblanos, and habaneros.

    The peppers are smoked are now in the pot along with 4 large onions, 4 cups of cider vinegar, a head of garlic, some water, 3 cups of cheap ketchup, and salt.

    This will cook down for 2 or 3 hours and I'll run it through the food mill to get rid of the skins and seeds.

    Ran it through the food mill and reduced it some. Need up adding a little drown sugar this time.

    I'm not a fan of spicy foods, but that looks really good.


    I have a bag of nice crabapples to pick through and process in the morning. I forget what color jelly these make. I hope the yellowish type, as they were good a few years ago.

    Nothing wrong with dreaming! We have a bunch of fairs up here in NH, always a good time, lots of wood related stuff. Chain saw competitions, log processors, portable mills, and the fair food is great.:yes:

    I looked into entering the local fair down here for jelly and jam, and it really was a lot to consider. There is the presentation of the jar, the clarity, texture, flavor, color, equal levels in all jars, no crystals or bubbles.:picard:

    Deerfield is coming up on the 28th. Best fair around, and 100 acres of free parking.

    I think you'll enjoy it, very agricultural and farm related. Lots of livestock, great antique tractors and and hit and miss engines.

    Coincidentally, I am headed for the York Fair this morning. Last day, hope it is not too crowded. Love to look at the old tractors and engines, and really love the agricultural exhibits.
    I am not sure, but I think there is an entry free for a lot of fairs, and I am something of a cheapskate--I mean that is why I can most of my food...:emb:

    Crabapple jelly done. Only about a 5 cup yield, but the yellowish jelly is so good. On second thought. A dash of cinnamon makes it taste like an apple pie.:drool:

    I picked some quince from the bush out back this evening and made some jam. I tried it years ago and I wasn't crazy about it. Not sure about it now either. It's like apple or pear but not really. It's quite different. Only four jars.

    I have some small yellow crabapples on the tree from the side of the house to try this weekend. Hoping for some good flavors.

    What to do on a cold rainy fall Sunday?Glad I picked yesterday before the rain started. 6 more qts of spaghetti sauce done and then shifted gears to salsa. 20 pts of salsa done but minus one in the picture, youngest boy stopped by and stole one. 20170924_182451.jpg
