    Looking good !!

    I did mine (no pics) with the rub and some Sweet Baby Rays BBQ sauce at the end. Along with spinach (which my scale says I need more of :whistle:)
    Came out fantastic !! Although I like the rice and will add that in next time, it really fills out the meal nicely.

    Sounds great, I love spinach, actually one of the veggies I eat most.

    For anyone interested the jerk seasoning I use is walkerswood. I've been using it forever and it's one of the best. I've even tried making my own with fresh ground spices but like this better. I get it at restaurant depot, never seen it in any normal supermarket though. Maybe online?

    You mentioned orange juice. Do you cut the marinade with OJ?

    Years ago I worked with a Jamaican women who picked up Walkerswood for me in a Jamaican neighborhood. The stuff is great. Never seen it near where I live, though.

    Yep. The seasoning is a real thick paste so I use orange juice to dilute it a bit and give it a little sweetness. Put it all in a bowl and pierce the hell out of the chicken with a knife then let it all party in there for a couple days. Recommendation is one ounce seasoning to two pounds meat. I find that is spot on for most people's tastes, it's spicy but not overly so. If I'm making it for myself and people I know like heat I'll double it and it gets quite a bit spicier.
