It's a very "mello" smokey, no bite flavor, it's almost like a sweet/sour taste but again very mellow. I was doing the apple, hickory, oak, and the occasional pear wood. One day about 15 years ago I was out in the yard and had a big sugar maple given to me for firewood. It's November, I went outside for whatever and I smelled the sugar maple….. It was on then… Been doing all my birds with it! "don't do beef with it" don't waste your time, not much transferable flavor, trust me! It's good with lamb also if you like it. Any maple is a great smoking wood, red maple has a nice flavor for ribs… But if you can, try a chicken with sugar maple, you'll love it!

I just looked up Mulberry trees in NJ, it says we have "loads" of them here, but I've never seen one! Hmmmm., now I gotta go find one
I'm surprised to find out Mulberry is such a good firewood. Now I see it's good for smoking too. The easiest way to find a Mulberry is park your car near one. The birds will let you know it's there. When I go for a walk I pass under a couple Mulberries that the trail runs along a fence line. Mulberries often grow as nuisance trees someone has not cut down and it established itself to big for someone to then get rid of. I always stop and eat some of the berries. I love the taste of Mulberries. I have two Serviceberry trees in my yard and in the spring I like to go out and pick some of those to eat also. Neither berry is harvested commercially, I wonder why? Has anyone tried to smoke with Serviceberry wood?
They don't grow big. More like an ornamental tree. Flowers early and berries early. I have so I can attract the Cedar Wax Wings as they migrate through. Pretty bird.
Not to derail this tread but, I'm burning hackberry in the house now, it "doesn't" smell good out side and stink bugs love it. I usually smoke with the traditional woods…. I gotta get some mulberry and burn it first, I'll find some in the spring.
