All last week, so I got some no-knead dough going late last night. Just pulled it out of the oven, and man, is it ever gooder.
I know I shouldn't be eating too much of this, but I love bread, and I'm pretty good at making it, so........... Always 2 loaves at a time.
    Proof.........

Bread's not all that bad for you. Just with everything, do it in moderation. Well, that rule doesn't apply to wood hoarding.

If you really enjoy eating something, have some. If you don't allow yourself to have any by cutting it out on a diet, then your body will crave it even more and you could go and over do it.

Dennis, it's super easy to make, but takes quite a while for the "rise", as in several hours or overnight.
For someone with arthritic hands (like me), it's great.

No need to knead with a no-knead recipe.
    No electricity needed to knead.
I've had a couple of bread machines. They broke.

I have just about worn out my tilt head KitchenAid. The next one will be the bowl lift.

My neighbor got a new mixer for her birthday, and she asked me today to show her how I make bread. The woman is 70something and cooks like no tomorrow, and I'm going to teach her how to make bread. She said she never has luck with yeast, which means she probably hasn't tried it in about thirty years. I've never had any not proof. I buy the big package of yeast, and have used it two years past the use by date on the package before.

We tried a bread making machine but after 4 tries, we gave it away. Maybe if my wife was not such a good baker....
