Christmas time is always my buddy time for making maple sugar candy, this year had alot of ppl wanting them. It's because of my love for maple syrup that got me so obsessed with all things wood and firewood!
I have over 15gal of our homemade maple syrup in the basement, was thinking on doing a big batch of sugar myself. What's your method? Going by temp.....
My brother and sister in law work full-time (year around) at a maple sugar shack making candy. I love it, but once at a fair I tried Maple Syrup Cotton Candy and while I do not want to sound like I am talking ill of maple syrup, I did NOT like that. In my house though, where I married a New Hampshirite, I think she would leave me and our Maine home if it was not forever stocked with real maple syrup.
Nice! I made some by accident before.... Tasted delicious but it took a lot of scrubbing to clean that pan!
I I heat it up to 242-245f then pour into a measuring cup let it cool to 200f stir till it turn opaque and you'll see the syrup with have a bit of a swirl of lighter colour to it and then I pour into the molds let them set pop em and package or eat them. I took alot of trial and error to get it right. I might just be a slow learner lol.

No gluten vegan friendly no animals were hurt to make it ( minus the squirrels ) no dairy all things ppl as before they make an order lol
