I woke up to 55 degrees and had my first cup of coffee. It is a perfect morning for making breakfast in the oven. I grabbed some small branches and touched off the oven. I soaked the wood baking door at the same time. I prepped the bread and mix in a cast iron pan while the oven heated. I fired it for only about 45 minutes just until the dome was warm on the top outside. I pulled some coals forward to heat the floor for about 15 minutes. A little sugar and cinnamon on top and in it went. About 45 minutes later it was looking good. Wisps of sweet steam trailed out of the cracks in the door. It was plenty hot in the middle and nice and fluffy. I cooked some breakfast sausages and gravy inside. All piping hot. I put some maple syrup on top. I had a second cup of coffee and ate on the back screen porch.
The casserole was 207 Calories per serving. It is just eggs, bread, 2% milk, sugar and a little butter smeared in the pan. - The gravy was 15 cal per serving. - Sausages 180 cal per serving (3). Not too bad in all, and it is filling.
