    Lookin good! We just cooked porterhouses and delmonicos last weekend over the keyhole pit.....and we used plum from a job I did last week for the smoke. Delicious!

    First time I ever used plum......

    I have a 32oz ribeye in the fridge for tomorrow night. Not sure what I'm going to cook it over, but it ain't gonna be propane.

    So I was thinking that steaks need a good bed of coals hotter than the blazes of hell....what better wood than hedge? Throw a little apple on late for smoke.

    If the hedge is anything like it's cousin mulberry, it will put out a wonderful smoke on it's own.

    They are great for summer. Block most of the radiant heat and there is zero smoke.
