I saw this one, and it looks really good. I haven't tried it, but will soon. Looks like real comfort food. Ingredients: Baked potatoes: 4 Idaho potatoes, washed Cheese sauce: 2 tsp butter 2 tsp flour 1/4 tsp salt 1/8 tsp black pepper 1/2 cup milk 10 slices American cheese, chopped Filling: 1/2 lb ground beef 1/4 cup onion, finely diced 1/8 tsp salt 1/8 tsp black pepper 1 tsp Worcestershire sauce 2 Tbsp yellow mustard 4 Tbsp ketchup 2 Tbsp dill relish Preparation: To prepare the baked potatoes, preheat the oven to 350°F. Place the potatoes in an 8'' x 8'' baking pan. Cover the pan with foil and bake until soft, about 1 hour. When the potatoes have finished baking, let them cool until you're able to handle them comfortably. While the potatoes are cooling, make the cheese sauce and the filling. To prepare the cheese sauce, melt the butter in a small sauce pot. Add the flour and cook, while stirring, for 30 seconds. Add the salt, pepper, and milk. Bring the mixture to a simmer, stirring constantly. When the sauce has thickened, remove from the heat and add the cheese. Stir until the cheese is completely melted. To prepare the filling, brown the ground beef with the onion in a small sauté pan over medium heat. Drain off the extra fat and place the meat into a medium-size bowl. Add the salt, black pepper, Worcestershire sauce, mustard, ketchup, dill relish, and cheese sauce to the bowl and set aside. Once the potatoes have cooled, cut an opening, lengthwise, from the top of the potato. Scoop out the flesh, creating a shell. Take 1/2 cup of the potato flesh and chop it into small pieces and set aside. Repeat with the remaining potatoes. Place the empty potato shells back into the baking pan. To assemble the baked potatoes, fold in the reserved potato flesh with the ground beef mixture. Fill the prepared potato shells with the mixture and bake for 45 minutes.
That looks good Larry I've done something similar ,but I whip the potatoes add cheese ,garlic, rosemary and crispy bacon bits stuff the shells top with more cheese and bacon . Comfort food is the best

Taters is "comfort" food. I also like rice and pasta, but potato always comes first. I am very fond of them when the skin is baked to be crispy and then buttered up. yum! That recipe is called cheese burger baked potatoes. That, some cold beverage, and a green salad then off to the recliner!
Went to the store looking for a couple bakers. Had to buy a whole bag of them. The wife is having a cooking day so she made up a whole sheet of them. She'll freeze them up in bags of two halves. She changed up the mix. Used a better cheese, left out the dill, ketchup stuff. We we add sour cream, bacon bits or maybe salsa. She also made up some chili and some pizza. Freeze ahead for later. I had one half of the stuffed potato. Really good. Nice to be able to go to freezer and get food you made yourself that is good and not full of salt, added fat, and chemicals. Where there is only two of us, unless we want to be eating the same thing, night after night, this is the best way to go.
My lovely bride made a outstanding peking duck for dinner tonight. Great day between the 1st class meal, Barrett-Jackson and the 2 football games.
Use lots of cheese, bake until the tops turn a bit golden. They are sooooo good! My team didn't win. No Super Bowl celebration going to happen here. Alway enjoyed the celebration better than the game, but without you team in the game, not a whole lot to celebrate.
This AM I tossed a chuck roast into the crock pot. I was in a hurry so I just tossed in a sweet onion after tenderizing the roast with an old cleaver I keep around for such duties. Added one can of beef broth and salt/pepper. Tonite it was falling apart tender… simply served it with a side of veggies… simple and tasty.
I hear ya on the celebration lacking. My team didn't even make it into the hunt. More depression years setting in for the Steeler nation. Oh well , c'mon Denver I guess.
