    Good day friends,
    I own a small coffee roasting business.
    I do artesian hardwood roasted coffees.
    All roasted to each order from in season freshly harvested bean. All bean are fair trade and responsible grown as well as organic when ever possible. This is a family business of my wife, 4 daughters, and myself.
    I am starting to ship orders and would like to share my coffee with you all.

    So what's special about hardwood-roasted coffee? Are the beans directly exposed to woodsmoke during the roasting?

    I can't find any quantities specified in your website's product descriptions.

    Wood roasting keeps more moisture in the heat giving the bean a better flavor profile. Yes it is in the direct path of the smoke. I sell by the bag which is 12-14 Oz depending on roast and moisture content.

    If you have much success you'll probably have to standardize that, as the FDA has rather specific requirements around food labeling. Good luck!

    The FDA isn't as complicated as some of the state food safety regulations and inspection. Our local inspector is awesome though. She helps a lot and explains every thing in understandable terminology.
    About wight that depends on coffee and roast. Some small bean at a lite roast I can fit 14 Oz in a bag. A dark roast larger bean it is only 12 oz. So every bag of dark roast Sumatra is the same but a lite roast peabearry will be a 14 Oz bag.

    I like light roast. More coffee flavor.
    Some will say there's more caffeine along with more coffee flavor but supposedly it's the density of the light roast, by measured spoonful rather than by weight you're actually using more coffee.
    I used to by coffee from Doka in Costa Rica after touring the factory and farm. Best cup of coffee is made right there, just dried in the sun unstored beans , fresh roasted and proper temp water cup of coffee can't be beat.
    Next best is local roasted, hopefully from beans that haven't sat in a warehouse for 2 or 3 years fresh and a good home grinder ( or have the roaster grind for you too )

    I kinda prefer a just-post first crack city roast myself but I don't care for "strong" dark coffee .

    I'm gonna be in Bali in October, I'll have to try to bring back some beans. Just no civet beans for me. :loco: :crazy:

    Lighter roasts do have brighter flavors. I am jealous of your travels.
    I agree coffee has to be fresh. I only get in season freshly harvested beans so we rotate regions. I also only roast to order. So I never store roasted coffee. Orders take a bit longer however any body can go get average coffee. Nevertheless snobs want the best.

    This weekend has been very busy I have almost completely sold out of all stock. But don't fear I have a shipment do in on Tuesday. Everything on the website is coming in. Although the Sumatra and Bali don't stay in Stock very long.

    Hey guys I did a little digging on best results with a k cup filter.


    "I start with a medium grind. You don't want it too coarse (like in French Press range) or too powdery. Somewhere in the middle is pretty good. Mine leans more towards coarse than fine. It helps (as it does with any coffee brewing method) to have a good grinder that gives a fairly consistent grind size, but you should be OK even if you have a cheap blade grinder, you just won't get optimal results.

    The secret is to pack the coffee down a little bit (not too much) by tapping the filter on the counter, but also leave space at the top of the filter. If you don't pack it down at all, the water will flow right through and you'll end up with a weak cup. If you pack it down but pack it too full, you'll have the pressure problem. The Keurig will think it needs to be descaled, and it won't brew a full cup because of the pressure.

    So I've found that filling it about to the lip, and then tapping it on the counter a couple of times gives me a good result. I end up with about an eighth of an inch of actual visible mesh in the filter above the coffee grounds, which gives it a little room to spread out so I don't have the pressure problem, but keeps it compacted enough that it extracts fairly well."

    Yes actually. By slow roasting and darker roast lowers the acidity.
    Most of our coffee is lower acidity then others sense by wood roasting is in a more humid heat we can hand crafted a profile that is smoother yet bold while retaining the coffees flavors.
