Wood fired oven - calzones, 2 out of 4 ain't bad

    I'm really out of practice with calzones. I fired the oven with white cedar kindling and loaded small maple splits. The wind was out of the Northwest, great. I started cooking sausage and portabella mushrooms for one. I made a pulled barbecue chicken for another.

    It fired for and hour, I raked the coals out for a bit and then I put the angle iron in. The winds shifted from the East and was blowing into the oven door. Ah, not the best direction now. The oven was very hot and ready to go.

    Now I usually as a rule make the plain cheese first to gauge the oven temp. I put in the portabello and sausage and brushed olive oil on top. I went inside for a minute to prep the next one. I get back outside and the calzones is on fire. Great, put it out, finish cooking and onto the next.

    Plain sauce and cheese was next. I used eggwash on top, no more oil. Simple, no crust on fire.

    The third one. Pulled barbecue chicken and onion. It cooked perfect, but I forgot the cheese.:mad:

    The last one was sausage and mozz cheese. It was fine.

    Rats, I forgot to not look before going to bed. I will be dreaming of calzones all night. Looking awesome as usual. I am sure the "burnt" one got eaten as well.

    They look great to me. Too bad we are so far away. You could come to my house and practice anytime you want. I like the oven.

    The deer head sticker in the window of the truck is from a previous owner. I left it there cuz it makes muh no-frills light weight truck look more bad azz;)

    From my mother who gleaned them from different recipes over the years. Still working on a thin crust recipe.

    1 cup of water 110 degrees
    1 teaspoon of yeast
    3 cups of bread flour
    1/2 tsp of salt.
