I like you.... Whats the best cut for beef jerky, i've been using top round, and trimming myself but it seems to be a little fattier than i'd like.
Try either flank steak, cut end to end at an angle, to get a wide strip, or thin cut tri tip, with the fat removed.
BHags welcome to FHC, great place to be. I was a butcher for 10 years in my 20's very happy I know that trade. Do you cut retail, or full fledged locker plant? I gotta ask.... what's your favorite cut to cut?
I cut retail, but worked in a family owned store that still cut hind quarters, fresh lamb, and whole ribs. I was there the last 20 yrs of their 70+ yrs in business. Now I'm in another independent supermarket. I liked breaking down hind quarters!
Welcome. What do you have for a pellet stove, and what brands of pellets are you burning? We love pictures of our stoves, are pellet stash, pets and stories. Beer for most. Ignore thong comments, they aren't what you might think they are about.
Tri-tip? Really? I would have thought it to be too marbled for jerky. I make a batch about once a month or so, usually use top round when it goes on sale under $3 a pound. I might have to try a tri tip.
